Filipino Arroz Caldo (Chicken Rice Soup)

Arroz Caldo is a ginger flavored rice-chicken soup delicacy where it is traditionally a good food for the sick. But in our case, we always cook Arroz Caldo after we had our prayer and fasting from our church. This type of rice porridge is actually popular in many Asian countries. It can be eaten or served with a side dish.

In some cultures, this kind of congee is eaten primarily as a breakfast food or late supper. Some of our known family friends eat this as a substitute for rice on other meals. I love eating this kind of congee specially when it is cooked deliciously with lots of ingredients in it.

Purely “Inato” Homely Way

This is our purely “Inato” homely way foods that we usually prepared every time were having our church family day held every last Sunday of the month.  “Inato” is a Visayan term which means “homely”. We bring our own foods and we gather them all together so that all of us could share our “baon”.

Thanksgiving Foods for Our House Blessing

We celebrated God’s blessing for our new home last Saturday. We actually don’t call it as a house blessing but we  dedicated our house to the Lord. For us Christians, we have these spiritual house cleansing and purification where we take authority over bad spirits that have been welcomed throughout the home’s history and we leave doors open for their escape. We also did a prayer of blessing while anointing it with an oil. And as we speak blessings to our new home, we prayed to let God’s angels preside and watch over as we live permanently here.

We did not prepare lots of food since we don’t have much visitors. Its just our family and some of our fellow church members. We just prepared roasted “lechon” pig, beef steak and pancit bam-i as our main dish. A simple fruit salad and watermelon was also added for our sweets and dessert. We really enjoyed that day as we all gathered together thanking God for his unmerited favor and blessing that He has given us.

Who Doesn’t Love Pancit?

Me getting some more of this hot and spicy pancit ^_^

Pancit is absolutely one of my favorite food since I was a child. I think most of us Filipinos really love pancit. We always love to prepare and have it on our table in any occasion and even if its just an ordinary day. The convenience and simplicity of this kind of starchy food is the key to its popularity. It is a veritable Filipino comfort food because its easier to cook than rice, and its more versatile and food combination friendly.

This pancit is best paired with loaf bread

We have also been taught by the Chinese that  we should eat birthday noodles instead of cake since Noodles represents long life and good health.

this pancit to our fellow church members

Although its quite  difficult to point to one noodle dish and call it pancit since it may be made with rice noodles, wheat noodles, or noodles which is derived from another source of starch. It may be served with a dry sauce, a thick sloppy sauce, or even a broth or soup.  The toppings for pancit are incredibly varied, including things like hard boiled eggs, shredded meat, and finely sliced vegetables, and the flavors of this dish are quite diverse that makes it tastes so deliciously good.

Shrimps, Anyone?

a fresh caught shrimps by the sea cooked in  adobo style

We all know that despite the high cholesterol content, shrimp is actually good for us. Shrimps which is one of the most delicious seafood are considered perfectly healthy to eat for people with normal cholesterol levels. This makes it a healthier alternative to other milk proteins.Although shrimp is not one of my favorite seafood but I still  love to eat it.

Did you know that shrimps can help reduce the risk of heart disease and other chronic ailments like cancer? It also helps solve memory gap and depression problems specially in adults. Yay! good thing shrimps is one of my mom’s favorite. ^_^

I better let my daughter eat more shrimps because it also helps in strengthening her teeth and bones. These are just some of the many benefits of eating Shrimps. I’m glad that shrimps has many healthful benefits. How about you my friends? Do you like to eat shrimps?

Creative Decor Veggies

Last Saturday, we were able to witnessed one of the most colorful and indigenous festival in the Philippines which was held at my hometown province in Bukidnon particularly at my birthplace in Malaybalay City.

It commemorates the deep tradition and rituals of ethnic groups that has long inhabited our province of Bukidnon. One of their highlight was the street dancing competition where they also showcased their artistic float creation  which is usually composed of native and edible foods such as vegetables, fruit, some  food condiments and more.

I was really amazed how they did such a very nice and creative decor veggies. It was created artistically. Just take a look at the photo below.

The vegetables such as tomatoes, cabbage, cauliflower, red pepper bells, carrots and even fruits like banana and flowers like anthurium and many others were arranged beautifully in an artistic way to build such a fabulous parade float.

EAT-ALL-YOU-CAN

If you feel like pigging out all the way to satisfy your hungry starving stomach, then eat-all-you-can is the best for you.

Although I am in a diet mood but when I saw this wide array of foods, I just can’t resist in tasting and eating some portions of these foods. Most of them are Filipino dishes such as menudo, afritada, fried chicken and squid, adobong manok paired with desserts and sweets like fruit salad, maja blanca, tapioca salad and more. We went there during lunch time. Their fixed rate was P200 per person.

We were fairly satisfied at the Lighthouse Restaurant that offers everyday eat-all-you-can for lunch and snacks.  All the foods  tastes as delectable as that of fine dining restaurants and it was good enough to suit the Filipino palate.  The set-up was that of a buffet table wherein we can get as much as we wanted and we can go back as many times as we can. No doubt, every penny spent was worth it.

Since, it’s a buffet we don’t have to wait for our orders to arrive. Basically, we had so much fun and we enjoyed the food. We might go back there sometime soon.

Jollibee Breakfast Meals

Jollibee Breakfast Joys is absolutely my hubby’s favorite breakfast meal. Every time I go out, he would ask me to order a take out meal of his favorite garlic rice with corned beef or beef tapa with egg. He also wants an extra garlic rice on it. He loves to eat it all by himself. Waaaaaaaah! I’m not actually not a huge fan of Jollibee’s Breakfast meals specially the garlic rice because I hate garlic. Grrr!

I only eat this regular yum and this serves as my breakfast already. You know I’m still on a diet right now…hehehe! While these jolly fries is for my daughter. This is her ultimate favorite and this is the only food that she loves to eat here in this popular fast food chain.

There are wide array of choices from Jollibee Breakfast Joys that offers something to suit every taste. Those who want a traditional Pinoy rice meal can choose Longganisa, Crispy Bangus, Chicken Tocino, Beef Tapa, Hotdog, Corned Beef and Breakfast Steak which all come with garlic rice, fried egg and your choice of coffee, hot chocolate or any regular cold drink. If you like pancakes then you can have it with butter and maple syrup and enjoy them either solo or value meal complete with a regular drink of your choice.

How about you my friends? what’s your favorite breakfast meals from Jollibee?

Hubby’s Special Hamonada

I actually blogged before about a special recipe written by my mother-in-law when she was still alive. These are the ingredients for her Special Hamonada. My hubby wants to try this one that’s why my MIL just wrote down the ingredients. Her Hamonada was indeed a special one because it tastes so deliciously good!

My hubby’s first attempt in cooking Hamonada was not that good because it was burned and parched out. His second attempt was perfectly cooked. But I wasn’t able to take a good photo of it so when I decided to let my hubby cook this specialty again for the third time, I was able to take a good and clear photo of it.

“Hamonada” is a Filipino dish that is usually served in Fiestas, Noche Buena, Media Noche and other special occasions. You can commonly find this in small barrios as their main course during Fiestas because this dish doesn’t spoil fast. For those who loves sweet and tasty dish, this one’s perfect for you.

Want to try this one?

You just need to prepare the following:

1 k. pork thigh/pata or pigue, cleaned and sliced

1 small can pineapple tidbits

8 oz. Sprite or 7up

1.5 tsp salt

3.5 tbsp. sugar

2.5 tbsp. vinegar

1/4 tsp. black pepper

3 cloves garlic

red onion

1/2 tsp. olive oil

1 small pack tomato paste

star anise

Simply mix all ingredients (except pineapple) in a casserole/pot. Let it boil for about ten minutes and then add pineapple. Simmer for another 20 minutes or till the meat is tender.

Enjoy!!!
